- 2 Fiber 1 pancakes (I added nutmeg and cinnamon to the batter)
- 1/4 c lite syrup
- 3 scrambled egg whites
- 3/4 cup strawberries
In case you hadn't noticed, I've been trying to use up the strawberries I bought earlier this week before they go bad. I really hate wasting produce due to spoilage.
For Lunch I had
- 1 cup whole wheat couscous mixed with
- chicken breast
- 1 tsp olive oil
- spinach
- mushrooms
Then for dinner I had eggplant parmesan again :) I took a better picture of it that didn't make it look like a brown mess like yesterday. BTW, this is in a toaster oven, just to give perspective of size.
